The olive is one of the pillars of Mediterranean cuisine. As an appetizer, in salad or cooked in tajines or on the pizza, the olive brings the South in recipes. Rich in antioxidants, it is harvested before maturity while it is still green or ripe when it has a bronze to black colour.
