Air drying is a widely used and proven drying process for food.
Air dried ingredients are used in many areas of food production. Basically, there are two different ways of preserving food by air drying.
Sun-
drying
Strong sunlight and low humidity are the best natural basic conditions for air drying. In countries with this climate, food has traditionally been preserved in this way. The natural raw materials are laid out in the open for several days and turned several times in the sun. In this way, the water is removed from the products in a natural way.

The amount of residual moisture varies depending on the type of product and the customer's wishes. Sun drying is a simple, cost-effective and natural process that we use frequently, especially for Mediterranean herbs, spices and dried fruits.
Industrial
air drying
Air drying is also a tried-and-tested process, but today we use it for dried foods on an industrial scale.

In contrast to sun drying, industrial air drying with belt and tray dryers is more controllable. In this mechanical process, we remove the moisture from the raw material very evenly by supplying hot air. In this way, the natural raw materials are preserved for a long time without the addition of preservatives.
